Born in Jamaica and raised in New Mexico, Founding Chef Dalton Wilson created a home in DW Bistro, where he could add some spice to the Las Vegas dining scene. Creating a menu full of vibrant and flavor-packed dishes, Chef Dalton introduced the essence of his upbringing in a new and approachable way with which Las Vegas locals and visitors alike fell in love. Throughout the years, different executive chefs and chef de cuisines have come and gone – each learning the DW way while imparting and leaving behind a few of their own flavors, takes and twists on the menu. And while DW Bistro is now a culmination of the hands and hearts of those that have played a part in the kitchen, Chef Dalton’s influence can still be felt in many of the dishes today.
